Spring is on the way, and my little garden is full of baby dandelion plants. I love Dandelion together with Rose and Geranium, they are the power plants that I work with in the Flower Garden of Mary Magdalene.
Dandelion is a powerful cleanser and detox agant, and helps to cleanse the liver, and so it is an ideal plant to work with at this time.
I harvested an entire baby plant and ate it all: leaves, roots and flowers. I chopped it up and added to tomato and cucumber and some lovely extra virgin olive oil. You can use lemon juice if you don’t have olive oil.
I love the fresh and wild taste of wild grown plants like dandelion.
If you take them from your garden, please make sure they are organic with no poisins, and that you wash them well before you add to the salad.
